Orange Marmalade & Coconut Cake




100g Caster Sugar

100g Soft Butter

100g Self-raising Flour

2 Eggs

75g Coconut

140g Seville Orange Marmalade

Line a 2lb tin (21cm x 11.5cm)

Pre-heat your oven to 180C

Cream your butter and caster sugar until light and fluffy.

Add your flour.. I know it sounds crazy but flour first then your eggs.

Add your eggs one at a time, scrap down the mixer if needed so well blended

Sprinkle in your coconut , followed by your marmalade.

Use your spatula and scoop every last precious bit of batter and fill your tin

Bake in your preheated oven for 30 - 35  minutes.

(the loaf can even take 40-45minutes depending on  your eggs and what marmalade you  used so just keep an eye on it at 30minutes )

Cake will be done when it springs back, if there is any wobble , put  it back in the oven for another ten minutes.

Sprinkle with a dusting of icing sugar you need the flaaaavours to sing through!
